A true cornerstone of the street food of the caruggi and of humble seafaring cuisine. The exceptionally fresh anchovies from the Ligurian Sea are carefully cleaned, butterflied, dipped in egg and breadcrumbs, and then fried immediately in hot oil. The result is a dry, golden, crispy coating on the outside, with a tender fish center.
