A historic and iconic specialty of this restaurant located on Passo della Futa. The meat, sourced from selected breeds and aged for a long time in the restaurant’s visible dry-aging chambers, is cut three or four fingers thick. It is expertly grilled over a live wood fire, leaving the inside exceptionally tender and rare while creating a flavorful outer crust enhanced only with coarse salt and a drizzle of oil.
