Operating since 1976 near the Flower Market, this historic family-run kiosk is a true Amsterdam institution for fish. Their signature dish is the classic soft roll filled with raw herring, expertly cleaned and filleted to order. Surprisingly creamy, buttery and delicate, the herring is traditionally topped with a generous cascade of chopped white onions and pickled gherkins.
