Carciofo alla giudia is a masterpiece of the Judeo-Roman tradition. The artichoke (strictly the "mammola" variety, tender and thornless) is opened into the shape of a flower and fried whole twice in boiling oil. This technique makes it incredibly crisp on the outside, with the leaves becoming flaky like pastry sheets, while preserving a soft, meaty, and flavorful heart.
