Operating since 1860 on the edge of the Ghetto, Piperno is a historic pillar of Roman Jewish cuisine. Its Carciofo alla Giudia is an absolute masterpiece: the local "mammola" artichoke is opened into a flower shape and fried twice, until its leaves become incredibly crisp like potato chips while the heart remains tender and succulent. An icon of tradition to enjoy in the intimate outdoor piazzetta.
