One of the most complex and iconic preparations in the local cuisine. It consists of a veal pocket, hand-stuffed with a rich filling made from eggs, sweetbreads, minced meat, peas, cheese and local formaggetta. It is carefully sewn shut, boiled in an aromatic broth and served cold, traditionally sliced thinly.
