Corzetti della Valpolcevera DeCo (Corzetti di Campomorone)

A very ancient and rare type of fresh pasta made from durum wheat semolina, typical of Valverde and protected by the DeCo designation. Unlike the famous printed corzetti from the Levante, these are shaped entirely by hand: a small ball of dough is made and then stretched with the fingers until it takes on its characteristic figure-eight shape. They have a unique rustic texture and are traditionally dressed with Polceverasca-style meat sauce or mushroom sauce.
