Fainè di Fainè Sassu (historically known as La Genovese) is a true gastronomic institution in the historic center of Sassari. This specialty made with chickpea flour, water, and oil is baked in large trays in a wood-fired oven. Thin and golden, it has a delicious crust and a soft center. It is served hot both in the classic version with black pepper and enriched with local ingredients such as onions, Sardinian sausage, or mushrooms.
