Famous specialty protected by the PGI mark. It consists of two layers of paper-thin, unleavened pastry, hand-stretched, enclosing a filling of melted crescenza cheese. Baked at an extremely high temperature, it becomes crisp on the outside and exceptionally soft on the inside.
