The absolute masterpiece of Ligurian gastronomy, served in a historic establishment with a very long tradition. Two sheets of very thin pasta, rolled out by hand until almost transparent, enclose a generous filling of the freshest crescenza cheese. It is baked at an extremely high temperature, creating a golden, pleasantly crisp surface with the characteristic bubbles, while the inside remains stringy, creamy, and irresistible.
