One of the most appreciated and historic seafood dishes on Via Sardegna. In Sardinian, it is called "fregula." The characteristic Sardinian semolina pasta, toasted into small clusters, is slowly cooked risotto-style in a flavorful, concentrated seafood broth, enriched with a generous cascade of arselle (the precious local clams from the Santa Gilla pond) and freshly chopped parsley.
