Malga Sbatui Gnocchi with Melted Butter

The signature dish of upper Lessinia, prepared by hand by mixing flour with boiling water poured directly onto the heat. This batter, expertly “beaten” with a wooden spoon, is dropped by spoonfuls into the water. At Agriturismo Gaspari, fresh ricotta made on the premises is incorporated into the heart of the mixture. They are traditionally served drowned in an exceptionally rich, golden butter melted from mountain-pasture butter and covered with a generous grating of aged cheese.
