A monumental gastronomic ritual that makes its way between the tables of this historic trattoria. The heated trolley offers a meticulously selected range of no fewer than seven traditional cuts of beef from the Piemontese breed and fattened ox, including scaramella, tongue, head, tail and cotechino. The meat, exceptionally tender and succulent, is carved to order and accompanied by the classic bagnetto verde, bagnetto rosso and artisanal mostarda.
