The true “good things in life” of the Castelli Romani, served on monumental wooden boards and trays. The undisputed star is the local artisanal porchetta, hot, flavourful, and with an incredibly crunchy crust (“cozza”). It is accompanied by a rustic triumph of pork coppiette with chili pepper, cured meats, baby buffalo mozzarellas, cheeses, beans with pork rind, corallina, and vegetables preserved in oil, all washed down with the indispensable jug of Romanella wine.
