The legendary and iconic dish of the local tradition, linked to an ancient fourteenth-century legend. These are handmade tortellini made with golden egg pasta, rolled so finely that it is almost like a transparent veil. Inside, they contain an extraordinarily delicate filling of mixed braised meats (beef, pork and chicken), expertly seasoned, and they are served to perfection, simply dressed with melted butter and fresh sage.
