A historic specialty made with exceptionally fresh mushrooms gathered in the woods of Cicolano, an area in which this establishment has been a true institution since 1959. The good ovoli mushrooms are carefully cleaned and sliced into very thin slices, arranged in the style of carpaccio. They are served fresh, simply dressed with a fine drizzle of local extra-virgin olive oil and a pinch of salt, bringing out to the fullest their firm texture and extremely delicate flavor.
