Ristorante Il Panaro is considered one of the undisputed homes of crescia eugubina, traditionally baked in a wood-fired oven on the typical stone disk ("il panaro"). Similar to a piadina but thicker, it has a compact, fragrant dough. It is served piping hot and filled in countless artisanal ways, among which the classic fillings with local sausage and mushrooms, wild herbs, or excellent Umbrian prosciutto stand out.
