Famous historic dessert invented in this pastry shop in the historic center. Its name derives from its shape and color, which resemble the red headwear worn by cardinals (the galero). It consists of two layers of soft sponge cake soaked in maraschino or rum, filled with a delicate pastry cream and fresh wild strawberries. The whole dessert is completely covered with a distinctive glossy pink glaze, also made with wild strawberries.
