“scacce” are Modica’s quintessential poor man’s food and “street food,” prepared in all the rosticcerie. There are versions with tomato and cheese, tomato and eggplant, tomato and onion, tomato and parsley, ricotta and onion, ricotta and sausage, and ricotta and green broad beans. But there are other variations too. The ones from Macelleria Colombo are excellent!
