The signature dish of the Grecanic tradition of Bova Superiore. The maccheroni are prepared by hand using a ferretto, following a very ancient peasant recipe, and dressed with a dense, rich sauce made from local goat meat, left to simmer over low heat for hours with herbs and tomato. The meat is extraordinarily tender and flavorful, ideal for finishing with a grating of Calabrian salted ricotta. An authentic immersion in the flavors of the Aspromonte.
