The house’s historic signature dish, imbued with its identity. These exquisite crespelle are prepared with a blend of white flour and buckwheat flour, filled with a rich, soft mixture made with stale bread soaked in milk and young Casera Valtellina cheese. They are rolled up, cut into small cylinders and arranged in a baking dish, then gratinated in the oven with plenty of melted local butter and sage.
