The spleen is slit open like a pocket and generously stuffed with a mince of parsley, garlic, chili pepper and fresh mint, then cooked slowly in a flavorful mixture of wine vinegar and white wine. Traditionally served in a sandwich, it stands out for its soft yet structured texture and its distinctly sweet-and-sour, intense and lingering flavor.
