Why try it

The undisputed king of Florentine street food, prepared according to the purest tradition at this famous kiosk on via de' Macci. The abomasum is simmered for a long time in a flavorful vegetable broth with tomato, then finely sliced by hand. It is served inside the classic "semelle" (Tuscan bread roll), rigorously hollowed out to remove the excess crumb, with the top half soaked in the boiling broth. It is seasoned with salt, pepper, green sauce and spicy oil.
