Pansoti are a typical Ligurian stuffed pasta, filled with a rich "preboggion" filling (a mix of local wild herbs) and ricotta. They are served with the classic walnut sauce, a thick, velvety cream prepared by pounding walnut kernels, garlic, extra-virgin olive oil, marjoram, and bread softened in milk. It is the restaurant’s signature dish, prepared by hand according to an old recipe carefully preserved and passed down since 1940.
