Pizza grassa ternana is a low, golden focaccia and a symbol of Umbrian peasant cuisine. It is not a classic pizza: its dough is worked directly with lard, sfrizzoli (pork cracklings), and pecorino romano. When bitten into, it is crisp on the outside, soft inside, and richly savory, with the pieces of meat clearly visible. It is eaten strictly hot or warm, straight from the oven, to fully bring out the intense aroma of the pork and melted cheese.
