Ragusana scaccia with ricotta and onion

The scaccia with ricotta and onion from Panificio Distefano contains Iblean cow’s-milk ricotta and Giarratana onion in a hand-folded sheet of durum wheat dough, with extra-virgin olive oil from the Monti Iblei. The bakery describes it as crisp on the outside and soft inside: in the slice, the white filling and the thin layers of dough can be distinguished. A specialty of the Ragusano tradition to try at the bakery on via Paestum.
