One of the most famous and beloved hot appetizers in the local mountain tradition. These are delicious, flavorful fritters made with buckwheat and white flour, hand-shaped into irregular forms. Inside, they contain a heart of Casera DOP cheese which, during precise-temperature frying to order, melts completely. They are served piping hot and stringy, traditionally laid on a bed of bresaola from Valchiavenna.
