The very fresh cuttlefish are sliced into strips and slowly stewed in a light tomato sauce flavored with aromatic herbs and deglazed with white wine. The mollusks are extraordinarily tender and soft, anything but rubbery, and pair perfectly with the peas’ intact sweetness and delicacy. A rustic and comforting dish.
