This iconic dish from Bari is prepared by risotting raw spaghetti directly in a black iron pan. The pasta cooks slowly in a concentrated broth of tomato, garlic, and plenty of chili pepper, stirred only when it sticks to the bottom. The result is unique in its kind: crispy, partially charred and caramelized spaghetti, with an incredibly intense, spicy, and enveloping flavor, served along the city’s seafront.
