A pocket-like variation of the celebrated “mangiare bianco,” a medieval masterpiece of Catalan origin. The typical snow-white milk cream, thickened solely with corn starch and intensely scented with lemon zest and cinnamon, is enclosed by hand in a thin, crumbly sheet of violada pastry made with lard. The pocket shape (tabaquera) gives the bite an astonishing initial crunch, which immediately gives way to a velvety, fresh and enveloping heart.
