This ancient and hearty Florentine traditional dish, born of thrift, celebrates the authentic cuisine of the quinto quarto. Served piping hot in the classic terracotta vessel, it combines beef offal and trimmings, cooked over a very low heat together with slices of stale Tuscan bread, which soak up the thick, flavorsome tomato sauce. A rustic and exceptionally fortifying mouthful, enhanced by a generous sprinkling of black pepper that accentuates its deep savoriness.
An authentic recipe, made with “humble” ingredients according to the traditional recipe. Absolutely worth trying!
