Chickpea cake (and rectangular pizza)

A historic and unmissable island institution operating in the old town since 1885. The star of the place is the traditional torta di ceci (or cecina), baked in the centuries-old wood-fired oven inside large copper pans; it has an incredibly soft, moist and melt-in-the-mouth center, protected by a thin golden crust on the surface, and should strictly be enjoyed hot with a sprinkling of black pepper. It is also excellent paired with their typical rectangular pizza by the slice.
