The fresh pasta is rolled out by hand and generously filled with a flavorful filling combining artisanal ricotta with asprelle (wild herbs from the area) or classic mixed herbs. The portions are decidedly generous (about 13 or 14 tortelli per serving) and perfectly dressed with melted butter and cheese.
