This historic and authentic dish celebrates the seasonality of bluefin tuna during its spring migrations. Slices of fresh tuna are expertly seared or fried and then served with a rich, fragrant peperonata. Red and green peppers are sautéed in a pan together with onion (often from Giarratana) and deglazed with a delicate touch of white wine vinegar or sweet-and-sour sauce, finishing everything with fresh mint leaves, capers, and black olives.
